niu rou mian!

jason loves niu rou mian (taiwanese beef noodle soup).  unfortunately, there’s no yummy place to get it in san diego.  dumpling inn in clairemont mesa is pretty good, but SUPER expensive at ~$10 a bowl.  so tonight i made a humongous pot of beef stew for not much more.  jason will have niu rou mian for days!  hahaha.  (not really, we freeze it in portions so he can just have niu rou mian whenever he wants!)

2-3lbs of beef shank
.5lb or so of beef tendon (optional… cause i ❤ beef tendon)
4 roma tomatoes
2 medium apples
half an onion
3 green onions
daikon/carrots
6 cloves of garlic
ginger
2 tbsp of chili bean paste (if you like it spicy, you could double this)
2 chinese spice packets (white with red lettering, has ginger, clove, cinnamon, star anise, etc)
soy sauce
cooking rice wine (i use michiu brand)
cooking oil
salt
sugar
pepper

dice up everything.  i like to cut everything into bite sized pieces.  heat up some cooking oil in a pot to brown the meat and tendon.  set the meat aside and add a bit more cooking oil to the pot.  add ginger and garlic to the pot to infuse the oil.  then add the chili bean paste and dump in the meat.  stir it around until it’s all mixed up, then use the rice wine to help deglaze the pan.  add the tomatoes, apples, the onion, the spice packets, some salt, some pepper, some sugar, about a quarter cup of soy sauce and some water, enough to cover everything.  stew this mixture for about 4 hours, adding the daikon in the hour.  (or you can cheat like me and use a pressure cooker ! 🙂 )

boil some noodles and dice up green onions and cilantro.  once the stew is done, add a few scoops of the stew to a bowl with the noodles, some of the liquid from boiling the noodles, green onions, and cilantro.  i usually add some boiled bok choy too! 🙂
