ragu bolognese!

1 pound ground beef and 1 pound ground pork, mixed
1.5 cup finely diced celery
1.5 cup finely dice carrots
1.5 cup finely onion
2 cups wine
1 cup milk
6 ounce tomato paste
28 ounces canned stewed tomatoes
italian seasoning
few drops of worcestershire sauce
minced garlic

heat up a large and heavy saucepan.  i usually use a dutch oven or something similar.  pour in a few turns of olive oil.  add the mirepoix (celery, carrots, onions) with some salt and cook it down until the onions are slightly translucent.  move the mirepoix aside and begin browning the meat, using your spatula to break down chunks.  i like the pieces of meat to be really small but i’m weird like that. once the meat is brown, mix it together with the mirepoix and add the garlic.  🙂

add in the stewed tomatoes and tomato paste, dissolving the paste as much as you can.  add in the wine, the seasonings, and a few dashes of worchestershire.  pour in the milk slowly and stir quickly to incorporate.  simmer for about 2 hours.



eat it with pasta!  make lasagna with it!  or make soup by adding diluting it with chicken broth and adding tortellinis!
